Recipe: Baked Butternut Squash 3 butternut squash 2 large sweet onions -- minced 1 cup hot water Preheat oven to 400 degrees. Line a shallow cooking pan with aluminum foil. Cut squash into halves and remove seeds. Place squash halves in pan, cut side up. Fill evenly with onions. Pour hot water generously into onion filling, gently, until water level reaches top edge of squash. Place pan into oven and cook about 1 1/4 hours, or until squash is tender when pierced with a fork. while cooking, check on dryness of onions and stir every 30 minutes. Baste squash if needed.
