Recipe: Chicken Jambalaya 1 cup Long-grain rice 1 cup onion - chopped 1/2 cup celery - chopped 1/2 cup green pepper - chopped 2 cloves garlic - minced 1/4 cup butter 16 oz can tomatoes - cut 3 oz tomato paste 1/2 cup smoked sausage - chopped 1 tsp creole Seasoning 2 large chicken breast -chopped 1/4 tsp hot pepper sauce Cook rice according to package directions. Set aside. In a 3 quart saucepan, cook onion, celery, green pepper and garlic in butter till tender. Stir in undrained tomatoes, tomato paste, suasage, and Creole seasoning. Bring to boiling. Reduce heat, cover and simmer for 30 minutes. Stir in rice. Cook, sitring occasionally, till heated through.
